Almond Shortbread
- 1 cup unsalted butter
- ½ cup sugar
- ¼ cup cornstarch
- 2 ½ cups flour
- ¼ tsp almond extract
- Confectioner’s sugar to sprinkle over
Preheat oven to 350 degrees. Grease 8” x 16” cookie sheet. Cream butter, and add sugar and cornstarch slowly. Then slowly add flour, mixing to combine. Add extract. Press into pan and score into cookies. Bake for 25 minutes or until very lightly browned. Cut while warm and cool on wire racks. Sprinkle with confectioner’s sugar.
