Apple Coffee Cake
- 1/3 cup sugar
- 1 T. cinnamon
- 3 apples, peeled, cored & thinly sliced
- 4 cups flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 5 eggs, lightly beaten
- 1 cup vegetable oil
- 1/4 cup orange juice
- 1 teaspoon vanilla
- confectioners sugar for dusting

Preheat oven to 350 degrees. Lightly grease a ring cake pan.
Toss sugar, cinnamon, and apples. Set aside.
In a bowl with an electric mixer, combine flour, sugar, baking powder, and salt. Add eggs, oil, orange juice, and vanilla; beat at low speed for 1 minute. Spoon 1/3 of batter into pan. Add 1/2 the apple mixture. Add another third of the batter, layer the rest of the apples, and top with remaining batter.
Bake 65 to 70 minutes. Let cool before removing from pan. A long, thin knife or spatula may be needed to pull cake from sides of pan.
