Apple Muffins

  • 1 egg
  • ½ cup milk
  • ¼ cup oil
  • 1 ½ cups flour
  • ½ cup sugar
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 Granny Smith apples, peeled and chopped
  • Topping:
    • 1/3 cup brown sugar, firmly packed
    • 1/3 cup broken nuts
    • ½ teaspoon cinnamon

Makes 12

Preheat oven to 400 degrees. In a medium bowl, beat together the eggs, milk, and oil. Add the dry ingredients, mixing well. Add the apples, stirring to combine. It will seem like a lot of apples for the amount of mix, but trust me on this. Grease a 12-cup muffin tin, and fill each one almost to the top. Mix together topping ingredients and sprinkle over tops. Bake for 25 minutes.
