Banana Nut Streusel Muffins

  • Streusel:
  • ½ cup pecans
  • ½ cup firmly packed brown sugar
  • 3 Tbs all-purpose flour
  • 2 Tbs butter or margarine
  • Muffins:
  • 15-oz. container ricotta cheese
  • ½ cup vegetable oil
  • 2 eggs
  • 3 ripe bananas
  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup sugar
  • ½ teaspoon salt

Preheat oven to 400 degrees. In a blender pulse pecans, then add brown sugar and flour, pulse to combine. Add butter and pulse to blend. Set aside.

In a blender combine cheese, oil, eggs, and bananas, blend until smooth. Combine dry ingredients in a bowl; add cheese mixture and fold in. Fill muffin cups half full and sprinkle a scant teaspoon of the streusel mixture over each. Bake about 20-25 minutes, until tops are light golden.
