Deluxe Corn Muffins

  • 2 eggs
  • 1 cup sour cream
  • 2/3 cup vegetable oil
  • 1 cup creamed corn
  • 1 cup corn meal
  • 1 cup flour
  • 1 tsp. Salt
  • 3 tsp. baking powder
  • 1 tsp. baking soda

Makes 12.

Preheat oven to 375 degrees. Stir baking soda into sour cream, then stir in eggs and oil. In a medium bowl, mix together corn meal, flour, salt, and baking powder. Add sour cream mixture and cream corn. Stir until just mixed together. Fill muffin cups half full and bake for 15-20 minutes, until done.
