Morning Glory Bread

  • 2 ½ cups sugar
  • 4 cups flour
  • 4 tsp cinnamon
  • 4 tsp baking soda
  • 1 tsp salt
  • 1 cup shredded coconut
  • 1 cup raisins
  • 4 cups grated carrots
  • 2 apples, grated
  • 1 cup pecans
  • 6 eggs, lightly beaten
  • 2 cups vegetable oil
  • 1 tsp vanilla extract

Combine sugar, flour, cinnamon, baking soda, and salt in a large bowl. Add coconut, raisins, carrots, apples, and pecans, tossing after each to combine thoroughly. Add eggs, oil, and vanilla, stirring only until just combined. Pour into three greased small loaf pans and bake in preheated 350 degree oven for one hour.

Can also be made as muffins: Spoon into greased muffin pans, filling 2/3 full, and bake for 20-30 minutes in a 375 degree oven. Makes almost two dozen muffins.
