Orange Whole Wheat Pancakes

These are light and thin, and lend themselve to many variations. Their advantage is that they are low in cholesterol. Good for folks who have dairy allergies.

  • 2 eggs, beaten
  • ¼ cup safflower or other low-cholesterol oil
  • 1 Tbs vanilla extract
  • 1 tsp almond extract
  • 2¼ cups orange juice, with a banana blended (banana optional)
  • 2 cups whole wheat flour
  • ½ cup wheat germ
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ cup blueberries, apple or pear chunks, or granola (optional)

In a medium bowl combine the eggs, oil, vanilla, and almond extract. Add 2 cups of orange juice.

In a separate bowl sift together the salt, flour, and baking soda. Mix in the wheat germ. Slowly blend the dry ingredients into the liquid, adding the remaining orange juice until the mixture is the desired consistency: Thicker for fatter pancakes, thinner for more crepe-like ones.

Fold in fruit or granola, if desired. Bake on a greased griddle.
