Oven Omelet
A great way to serve a few people. This is a flexible recipe, and can be doubled easily--if you do, be sure to add to the cooking time.
- ¼ cup chopped onion
- 4 eggs
- 1 tbs chopped parsley
- 1 tbs chopped chives
- 1 tbs chopped basil
- 1 cup half and half
- Salt and pepper to taste
- 1 cup grated cheddar or Swiss cheese
- 1 tbs butter
Heat oven to 350 degrees.
Melt butter in a small oven-proof skillet. Slowly sauté onions until translucent, but not browned. Beat together eggs, herbs, seasoning and half and half. Pour into pan with onions, and spread cheese over top.
Bake in oven for about half an hour, or until puffed and golden. Cut into wedges and serve.
