Peach Muffins

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp allspice
  • 1 egg
  • 2/3 cup brown sugar
  • ¾ cup milk or buttermilk
  • ¼ cup oil
  • ½ tsp almond extract
  • 1 cup diced fresh peaches

In a medium-sized bowl, combine dry ingredients. In a large bowl beat together egg, brown sugar, milk, oil and extract. Add the dry ingredients and mix. Add peaches and gently fold together. Fill greased muffin pans 2/3 full. Bake in a 375-degree oven for 20-25 minutes.

Makes one dozen.
